Since transitioning to the plant-based diet, I have truly missed being able to whip up a quick tuna salad sandwich for lunch. This was a staple in my diet years ago, both for its simplicity and tastiness. I have long searched for a worthy opponent, and after much experimentation, I have finally perfected this delicious chickpea alternative. These sandwiches have been a work-from-home favorite, especially since they can be made in less than 5 minutes! Slap this on to your favorite bread, toasted or fresh, add your condiments of choice, raw greens, and enjoy! (FYI: These pair amazingly with a hearty soup, as pictured above.)
Ingredients:
- 1 can of chickpeas (approximately 400 ml)
- 2 green onions
- 1 celery stalk
- 2 tbsp vegan mayonnaise
- 1 tbsp sweet mustard
- 1 tbsp ketchup
- 1tsp apple cider vinegar
- 2 tsp lemon juice
- 1/2 tsp dill
- salt
- pepper
1. Drain and rinse chickpeas, and place them in a microwave-safe bowl.
2. Microwave chickpeas on high for 2 minutes, or until soft.
3. Mash chickpeas with a fork until consistency is even, or to your liking
4. Chop celery and green onions, and add them to the chickpeas.
5. Add vegan mayonnaise, sweet mustard, ketchup, apple cider vinegar, lemon juice, and dill; mix well.
6. Add salt and pepper to taste, and serve!
